Superfood treats with all the sweets

Recipes that are perfectly healthy & yet completely satisfying. You'll feel like your cheating, but actually be doing good for your body. This is how eating should be done. All recipes are vegan & gluten free. These recipes are extraordinary in taste. Please let me know what you think...


Oat Bread

Looks & Tastes just like regular sweet bread, but even better cause it's healthy! Preheat oven to 350 degrees. Combine wet / dry ingredients separately. Wet ingredients: 2 ripe bananas, 1/4 c. maple syrup or honey, 1 tsp. vanilla, 1/2 c. coconut or almond milk. Dry ingredients:1/4 c. coconut sugar, 2 c. gluten free oat flour, 1/2 tsp. sea salt, 1 tsp. baking powder, 1/2 tsp. baking soda. After mixing wet ingredients, add in dry ingredients. Pour batter into a bread pan. Make sure your bread doesn't stick by rubbing coconut oil throughout the pan. *Bake for 35 mins. Turn off oven & leave in for additional 10 mins


Vegan Chocolate

In a sauce pan on low heat combine- 1/2 C. Cacao powder, 1/4 C. Coconut butter, 2 tbsp. coconut milk, 1 tsp. vanilla, 2 tbsp. maple syrup, pinch of stevia. Combine all ingredients well, place in a glass container & refrigerate for 30 mins.


Cookies

Preheat oven to 350 degrees. Create a flax egg- combine 2 tbsp. ground flax seed with 6 tbsp. of water, let sit for 15 mins. Combine 2 C. Gluten free oat flour, 1 C. Gluten free oats, (I like the way my cookies look with the whole oats or you can blend to make oat flour), 2 tbsp. coconut sugar, 1/2 tsp. baking powder, 1/2 tsp. baking soda, 1 tsp. cinnamon & pinch of sea salt. Mix Wet ingredients: 1 ripe banana, 1/4 C. coconut oil, 3 Tbsp. almond or coconut milk, 1/3 C. Maple syrup, 1 tsp vanilla. Add in flax egg. Combine dry & wet Ingredients. Optional: fold in raisins, choc. chips, walnuts. Place on a coconut greased baking sheet.

*Bake for 10 mins. *Makes 20-25 cookies


Granola

Perfect as a snack by itself or as cereal

* 1 cup frozen fruit such as blueberries, strawberries, etc.

*1 frozen banana

*3/4 -1 C. of nut milk such as coconut, flax, or almond

*1/2 Tbsp. Acai powder (Amazon)

*optional: 1 Tbsp. pure maple syrup, 1/4 C. almond butter, 1/4 tsp. cocoa powder (#1 food in high antioxidants), 1Tbsp. coconut cream

Toppings:

*Homemade granola (find recipe below), coconut flakes, sliced fruit, hemp seeds, honey, goji berries, cocoa nibs

In a blender mix all ingredients besides your toppings in a high speed blender until smooth. Pour into a bowl & top off with your favorite toppings.



Blueberry Muffins

I love making these as mini muffins, they are a perfect food to save & take with you on the go

Preheat oven to 360 degrees. blend 1/4 C. chia seeds in blender. Mix 2 ripe bananas, 1/2 C gluten free oat flour, 1/2 tsp. baking soda, pinch of sea salt, 1/4 c. maple syrup & 1 Tbsp. lemon juice in blender till well combined. Stir in wild blueberries. Place in cupcake pan and bake for 20 mins or when the tops are golden brown. They'll continue to firm up as they cool.


Smoothie Ice Cream Bowl

* 1 c. frozen blueberries &/or strawberries

*1 frozen banana

*3/4 C. coconut cream or coconut milk

1 Tbsp. pure maple syrup

Toppings:

*Granola (listed above), coconut flakes, sliced fruit, hemp seeds, honey,berries, cocoa nibs

In a blender mix all ingredients besides your toppings in a high speed blender until smooth. Pour into a bowl & top off with your favorite toppings.
