Super food breakfasts for a super day

Start your day off with these perfectly healthy/Vegan super foods for your best day ever. As a professional in the beauty industry I believe beauty first starts with healthy clean eating. Here are some of my favorite vegan breakfast choices to help you start your day off right!


Soaked Oats

*1 cup Gluten free oats

*1c. nut milk such as Almond, coconut & my personal favorite flax milk

*1 Tbsp. Pure Maple syrup (honey doesn't mix well unless the food is heated)

*Toppings: chopped up fruit (my favorite is bananas & raspberries), fruit puree, hemp seeds (loads of protein), chia seeds, cinnamon, nutmeg, vanilla, shredded coconut, nuts, almond butter, cacao.

This recipe is great for on the go, simply mix all ingredients into a mason jar or Tupperware & wait at least 1 hr. before eating. The longer it sits the mushier it gets. You can store in the fridge or simply just keep it out. I like mine at room temperature or when ready simply heat it up.


Blueberry Detox Smoothie

*1 cup nut milk such as Almond, coconut, cashew, flax milk

*1 Frozen banana

*1/2 C. Blueberries

*1 tsp. barley grass juice powder

* 1 tsp. Spirulina powder

*pinch of stevia

*Pinch of cinnamon

Mix all ingredients in a blender on high speed unto smooth.


Vegan Protein Smoothie

*1 Frozen banana

*1-2 Tbsp. of Pure Maple syrup

*1 cup nut milk such as Almond, coconut or my personal favorite flax milk

*1 scoop Vegan protein mix (I use Garden Life Raw Organic Protein. This one is filled with tons of plant based protein ingredients & has no added sugar, dairy, preservatives. Plus it's all organic & non GMO)

*1/4 Cup Hemp seeds

*1 Tbsp. Almond butter

*1 tsp. Vanilla & Cacao powder

*Sprinkle cinnamon on top (helps increase metabolism)

Mix all ingredients in a blender on high speed unto smooth.


Gluten & Vegan Avocado Toast

*1 slice of Charlotte's dairy free rice bread

*1 mashed avocado

*Lime, salt, pepper, olive oil, balsamic vinaigrette

*Toast your bread in a toaster oven, toaster or frying pan with some oil or ghee. While cooking toast mix avocado, juice from a lime, Himalayan salt, red pepper flakes and pepper into a small bowl. Spread onto the toast. Top off with cilantro & chopped tomatoes or pico de gallo. Drizzling a half and half mixture of balsamic vinaigrette/olive oil adds a little extra healthy fat to your toast.



Iced Coffee with NO carbs/NO dairy


*1-2 Cups of plain cold coffee over ice

*5-8 drops of stevia drops (Stevia is a very healthy alternative to sugar.)

*2-6 Tablespoons of coconut milk creamer

Mix all ingredients to your desire of cream & sweetness. I love making my coffee this way, because it's no carbs & Vegan



Fruit bowl/Acai bowl

* 1 cup frozen fruit such as blueberries, strawberries, papaya

*1 frozen banana

*3/4 -1 C. of nut milk such as coconut, flax, or almond

*1/2 Tbsp. Acai powder (Amazon)

*optional: 1 Tbsp. pure maple syrup, 1/4 C. almond butter, 1/4 tsp. cocoa powder (#1 food in high antioxidants), 1Tbsp. coconut cream

Toppings:

*Homemade granola (find recipe below), coconut flakes, sliced fruit, hemp seeds, honey, goji berries, cocoa nibs

In a blender mix all ingredients besides your toppings in a high speed blender until smooth. Pour into a bowl & top off with your favorite toppings.


Granola

*2 cups Gluten free Oats

*4 Tbsp. Pure Honey or Pure Maple syrup

*2 Tbsp. pure honey

*1 tsp. Vanilla

*Dash of cinnamon & nutmeg

*1/4 cup of nut butter

*1/4 cup seeds such as pumpkin, flax seed, hemp seeds

*Optional nuts, dried fruit, coconut flakes

Blend oats, cinnamon, nutmeg, seeds & nuts in a large mixing bowl, spread out onto a baking sheet. In a sauce pan, combine Maple syrup, honey, vanilla, nut butter. Heat until warm and well combined. Slowly pour over the oat mixture & mix. Bake for 25 minutes at 325 degrees. Half way through make sure to take out and mix granola for an even cook. When granola is cool, sprinkle on dried fruit & coconut flakes.
